Chicken Albondigas

Total Cook Time: 1 hour 30 minutes


Ingredients:

Ground Chicken, White Rice, Potatoes, Carrots, Mexican Squash, Jalapeños, Chile De Arbol, Tomatoes, Onions, Cilantro, Oregano, Chicken Bouillon, Salt, Garlic Cloves


Instructions:

1. Use pot to fry 2 sliced tomatoes, 1/4 sliced onion, 1 tbsp oregano, 3 garlic cloves, 2 tbsp chicken bouillon for 5 minutes then add enough water to fill the pot halfway

2. Let boil for 10-15 minutes

3. In a medium sized bowl add 1 1/2 cups of white rice, 2-3 cups water microwave for 8 minutes set aside

4. Season ground chicken (used 2 lbs) with meat seasoning, add the rice and mix, make ground chicken into meatballs

5. Add meatballs into boiling water

6. Add all the veggies, 1/3 cup cilantro, 2-3 cubes beef bouillon

7. Add 1/2 cup of white uncooked rice into pot

8. Cover and let boil for 25 minutes or until both veggies and rice are fully cooked

Garnish with chopped cilantro, onions, jalapeños, lime and roasted Chile de Arbol
